Mango and Brie QuesadillasMakes 4 Servings
This combination of mango and melted Brie is luscious, but you can try whatever combination of fruit and cheese that appeals to you - even good old apple and cheddar.
1/2 lb Brie cheese, thinly sliced
6 small flour tortillas
1 large ripe mango
- Divide half the slices of Brie evenly along the bottom half of each tortilla. Top with mango slices and the rest of the Brie slices. Fold in half.
- Heat nonstick skillet over medium heat. Cook tortillas 2 to 3 minutes per side until cheese is melted and tortilla is browned.
- To serve, cut in half.
