Gazpacho
Makes 4 ServingsThere is nothing better on a hot summer night than an icy cold bowl of gazpacho! Nicely complimented with some warm bread smothered with herb butter!
Ingredients
Gazpacho
1 large cucumber, seeds removed
2 tomatoes
1/2 red pepper
1/2 green pepper
1/2 red onion
2 celery sticks
2 garlic cloves
4 cups tomato juice
4 tbsp red wine vinegar
1/2 tsp salt
Tabasco to taste (optional)
Herb Butter
1 cup butter, softened
2 garlic cloves
2 tbsp fresh basil
2 tbsp flat-leaf parsley
1 tbsp chives
1/4 cup Parmesan cheese
Directions
Gazpacho
- Finely dice cucumber, tomatoes, peppers, onion and celery. Place in bowl. Stir in the remaining ingredients. Refrigerate, until very cold.
- Serve with a good bread and Herb Butter.
- Combine all ingredients in a food processor until smooth.
- Butter slices of bread and serve at room temperature or wrap in foil and warm in a 350°F oven for 15 minutes.
